METHOD FOR PRODUCING ALPHA-MONOGLYCERIDE KETAL

PROBLEM TO BE SOLVED: To provide both a simple and efficient method for producing a high- purityα-monoglyceride ketal and a method for producing anα-monoglyceride using theα-monoglyceride ketal. SOLUTION: An acid of formula (1): R1-COOH is reacted with a ketone or an aldehyde of formula (2): R2-CO-R3 and a glycerol in the presence of a catalyst to give theα-monoglyceride ketal of formula (3) [R1 is a hydrogen atom or a 1-23C aliphatic hydrocarbon group; R2 and R3 are each a hydrogen atom, a 1-22C alkyl group, an aryl group containing 6-30C total carbon atoms or the like] and the obtainedα-monoglyceride ketal is deketalized to give theα-monoglyceride.
