摘要 PURPOSE: Provided is a method for preparing a ripened Kimchi to be combined instantly of vegetable and sub-materials packed separately just before eating. Therefore, one can have fresh ripened Kimchi in a proper volume anytime compared to existing Kimchi. CONSTITUTION: A method for preparing a ripened Kimchi to be combined instantly is composed of a step to prepare ripened vegetables and a step to prepare ripening sub-materials. A method for preparing ripened vegetables comprises the steps of: (i) salting vegetables while adjusting the salt volume as season; (ii) ripening the salted vegetable while changing vegetable chlorophyll into copper chlorophyll to prevent browning phenomenon by using copper wire nets or CuSO4·5H2O solution; and (iii) packing and distributing in cold. A method for preparing a ripening sub-materials comprises the steps of: (i) maturating several seasoning materials such as salted seafood, powdered red pepper, garlic, Welsa onion, seaweeds, α -starch, and antioxidant at 5-10 deg.C for a long time; and (ii) freezing and drying for long time distribution and storage. The ripening sub-materials are used by adding 4-5 times drink to it and making into colloid state.
