PURPOSE: A potato vinegar having improved preservability and its producing method in large scale are provided. CONSTITUTION: The potato vinegar is produced by the steps of: washing and crushing potatoes; adding water and performing a sucrose enrichment process; cooling the sucrose enriched potato solution; adding malted wheat, coenzyme agents, liquid enzyme or purified enzyme into the solution and mixing them; inoculating Zygosaccharomyces fermentati into the solution and alcohol fermenting the solution; filtering the fermented culture, inoculating Acetobacter sp. into the filtrate, and acetic acid fermenting the solution; aging the fermented culture and filtering it with diatomite; sterilizing and cooling the filtrate, and filtering it with 0.5 micrometer filter; selecting the filtrated potatoes vinegar having the total acidity of more than 4.0; and packing it in PET bottles or glass bottles. |
