PURPOSE: Provided is a garlic peeling apparatus by spraying high-temperature and high-pressure air to the garlic, which can remove the skin of the garlic easily with minimizing damage to the garlic. CONSTITUTION: The apparatus comprises a garlic clove separator(10) composed of an upper and a lower rollers(11,12) rotated in the opposite direction for separating the garlic into each clove with coming off each skin from each garlic clove a little, a clove preheater(30), a main peeling machine(40) completely removing the skin from the preheated cloves, a discharging device(20) sucking and discharging the skins, and a chain conveyor(70) removing the garlic repeatedly. The main peeling machine includes 3-4 rod shaped spraying parts(41) having each heater(31) therein and longitudinal spray nozzles(43) and being arranged perpendicularly to the moving direction of the garlic and connected with each other by connecting poles(44), a compressor(45) connected to each spray part for supplying compressed air of 6-10kg/cm¬2, a guide device supporting the top part of each connecting pole of which height is adjustable and guiding straight-line reciprocating motion of the spray parts, and a power transmission device for moving the spray parts in a zone set by the guide device.
