The egg hatching method has the eggs (1) supported in stacked trays (2) within a hatching trolley/hatching frame, each of the eggs supported in a non-horizontal position, with the air bubble pointing upwards, with subsequent movement into 2 or more further positions, by application of a controlled force/movement, for defined movement of the embryo within the egg, e.g. a reversible tipping movement provided by controlled movement of the egg tray. An Independent claim for an egg hatching device is also included.
