SUBSTANCE: method includes carrying out progressive preliming, liming, first saturation performed in two steps with intermediate juice liming and filtration to separate precipitate after each saturation step, and second saturation and filtration. Liming of juice before the first saturation is performed with (i) precipitate separated during filtration from the first- saturation first-step juice and (ii) lime, whose concentration corresponds to 0.2-0.3% CaO based on the weight of beet. Intermediate liming is performed with precipitate obtained from second-saturation juice and lime in amounts corresponding to 0.1-0.2% CaO. Liming before second saturation is performed with 2.0-2.2% CaO to degrade amide and reducing substances.
