摘要 food industry. SUBSTANCE: candy contains case manufactured from whipped mass prepared by whipping egg white and water at ratio 1:(6- 6.5) until sumptuous stable froth is obtained. After that, agar-sugar-treacle syrup, flavoring, citric acid, and colorant are successively added to whipped white. Before addition of flavoring, extra gelatin solution is also added. Resulting paste is molded into small conical caps with inside surface covered with vegetable oil, whereupon wood pallet is immediately inserted into case. Case paste is characterized by density 300-400 kg/cu.m and corresponding component ratio. EFFECT: improved quality and storage stability of candies. 2 cl
