PROBLEM TO BE SOLVED: To provide a method for producing a pasta product using rice flour as the main raw material, characteristic in being suitable even for persons with atopic constitution to tastily eat without anxiety, through which a novel way of eating rice while making the best use of rice flavor can be proposed, the pasta product can be supplied at a moderate price because of having no necessity of a heating process and drying process, and further, creation of 'culture about a novel way of eating rice' and of 'novel rice-eating culture' is attained by applying the pasta product to a pasta dish as a rice menu. SOLUTION: This method for producing a pasta product using rice flour as the main raw material, comprises the following steps: preparing rice flour as the main raw material; adding proper quantities of calcium and albumen powder to the rice flour; mixing the resultant product for a few minutes, on the other hand adding proper quantities of whole egg powder, common salt, saccharides and alcohol to a proper quantity of carbonated water; mixing the thus obtained mixtures followed by adding a proper quantity of water or hot water thereto; and mixing and kneading the resultant mixture; making the thus kneaded mixture a noodle strip-like form using a combined roller followed by maturing the noodle strip-like mixture for about one hour and thereafter rolling out the thus matured noodle strip-like mixture, and then cutting the thus rolled noodle strip-like mixture using a cutting blade so as to make a noodle-like form or paste-like form. |
