PROBLEM TO BE SOLVED: To provide a buckwheat noodle-cutting device for cutting a thinly stretched buckwheat noodle belt in a set width, capable of freely adjusting its width without changing the width of the buckwheat noodle and causing beautiful noodle cross sections. SOLUTION: This buckwheat noodle-cutting device is provided by installing a sending part 6 at a horizontal guide 5, which can also be transferred intermittently, attaching an L-shaped guide 12 at the sending part 6, capable of moving a cutting knife attached to the L-shaped guide in up-and-down direction and also horizontal direction so as to move further by 1 pitch for each one process.
