PROBLEM TO BE SOLVED: To solve the problems that heat exhaust directly flows to a heating chamber sidewall surface at the lower part of an oil tank, the sidewall part is heated to a substantially high temperature, there is the danger that an opera tor or the like touches the hot sidewall and gets burned, the heat exhaust is uselessly used for heating the sidewall that much and heat efficiency is low. SOLUTION: By forming the bottom surface 1b of the oil tank in the return groove 4 of oil at both side parts lower than the bottom surface 1a of the oil tank 1 at the traveling part of a scraper 3 and projecting it downwards with a level difference on the side of a heating chamber 5, the flow of the heat exhaust of a gas burner 6 in the directions of both sidewalls of the heating chamber 5 is obstructed, it is prevented from being directly exposed to the sidewalls and the heating of the part is mitigated. Also, by increasing a heat exchange area to the oil tank 1 at the projecting bottom surface part at the part of the return groove 4 and more efficiently exposing the heat exhaust to the bottom surface of the oil tank 1, the heat efficiency in this frying machine is substantially improved.
