PROBLEM TO BE SOLVED: To obtain a food and drink treated with a 4-substituted resorcinol derivative effective for inhibiting the oxidation browning of food and drink, especially the enzymatic oxidation browning caused by PPO activity. SOLUTION: The objective food or drink is obtained by treating a food or drink with a 4-substituted resorcinol derivative of an amount sufficient for preventing or inhibiting the browning of the food or drink liable to cause the browning by an enzyme.
