Pasta is mfd. by mixing cereal flour or semolina with 25-40% water. The mixt. is kneaded and extruded. The mixt. is forced through the extruder by a gear pump. Mixing and kneading of the pasta is pref. effected by two screws rotating in the same sense and meshing with each other. Cereal flour of particle size 50-150 mu m or cereal semolina of 250-350 mu m is used. The mixt. and kneading processes take 20-60 secs., during which time the pressure is maintained at 1-12 bar. Extrusion is carried out at 80-120 bar. Before extrusion the mixt. is degassed by applying a vacuum of 0.2 bar. The temp. is kept < 55 degrees C. at all times. <IMAGE>
