food-processing industry. SUBSTANCE: apparatus has frame carrying drive, oil reservoir with charging and discharge zones, heater, and conveyor made in the form of rotor with carriers. Heater is positioned below oil reservoir in heat-conductive mass. Carriers are positioned on conveyor shell. Conveyor is attached through split axles to drive split axles. Carriers are arranged tangentially to conveyor shell at angular pitch of 45 deg and equipped with scraper. Construction of apparatus allows conveyor to be readily assembled, sizes of oil reservoir to be reduced and, as a result, product quality to be improved due to fast replenishment of oil in reservoir. Chips may be repeatedly fried due to usage of scraper mechanism. EFFECT: increased efficiency and simplified construction. 4 dwg
