PROBLEM TO BE SOLVED: To provide a method for producing an Awayuki bean curd (pudding- like bean curd). SOLUTION: This method for producing the Awayuki bean curd by coagulating a soybean milk by using a coagulating agent comprises using the soybean milk in a low concentration and adding albumen and an oligosaccharide thereto. As a result, the Awayuki bean curd having smooth texture and hardly causing syneresis when preserved is provided, and the Awayuki bean curd can suitably be eaten as a dessert. |
