PROBLEM TO BE SOLVED: To obtain a beverage comprising insoluble calcium dispersed in a high concentration. SOLUTION: This insoluble calcium-containing beverage is obtained by formulating whole milk powder and water for dissolution with microcrystalline cellulose, a peptide obtained by treating calcium caseinate with an enzyme and insoluble calcium to give a first dispersion, homogenizing the first dispersion, formulating the first dispersion with other materials (cocoa powder, granulated sugar and water) to give a second dispersion and homogenizing the second dispersion again. The first dispersion comprises 0.5-0.8 pt.wt. of microcrystalline cellulose and 0.1-0.2 pt.wt. of the peptide based on 1 pt.wt. of the insoluble calcium. |
