CONSTITUTION: A method for producing dough for a yeast fermented food comprises kneading a part of raw materials including starch among raw materials for the yeast-fermented food under a reduced pressure or the atmospheric pressure, pressing and extruding the kneaded product, when kneaded under the atmospheric pressure, adding the remaining raw materials, kneading the mixture under the atmospheric pressure, and then fermenting the obtained kneaded product. The method for producing the dough for the yeast-fermented food comprises starch-containing all raw materials for the yeast-fermented food under a reduced pressure or the atmospheric pressure, pressing and extruding the kneaded product, when kneaded under the atmospheric pressure, further kneading the product under the atmospheric pressure and then fermenting the obtained kneaded dough. And the method for producing frozen dough for the yeast-fermented food comprises freezing the kneaded dough.
