Stable potassium sorbate is obtained by concentrating an aqueous potassium sorbate solution employed as a feed liquid with a thin film evaporator to yield a fluid concentrate consisting of crystalline potassium sorbate and aqueous mother liquor. The crystalline potassium sorbate is separated and dried.
