<p>A novel continuous wine stabilization procedure is carried out in a plant comprising a vat (C), a plate heat exchanger (B), a filter (F) and a main refrigeration unit (D) for the vat. It incorporates an auxiliary refrigeration unit (1) to provide pre-cooling, containing evaporator (3) and condenser (4) exchangers linked by an expansion channel (5), reducing the work required by the main unit (D). The evaporator exchanger (3) cools the wine by direct expansion of a coolant fluid or a glycol/water solution in a closed circuit, the fluid is condensed in the condenser exchanger, and the calories are recuperated by the wine on leaving the plant.</p> |
