Production of a fat composition comprises: (i) liquifying a fat (mixture) and optionally emulsifying with further ingredients; (ii) mechanically treating the liquified product and cooling under such conditions as to give controlled crystallisation; (iii) further mechanically treating the crystallized product at 10-30 deg C and optionally mixing with other solid ingredients; and (iv) packaging the product.
