Method for freezing liquid foodstuffs is carried out on the surface of a cooled, rotating, rigid roller (1). The frozen material is then separated from the roller by a doctor blade (5) and conveyed on for further processing and packing. An Independent claim is included for a device for carrying out the above process comprising a vat (2) which can be filled with the foodstuff, a cooled, rotating roller which dips into it and a doctor blade.
