PROBLEM TO BE SOLVED: To provide a method for producing an egg product capable of providing smooth and comfortable palate feeling when swallowed together with a low-cholesterol dried yolk. SOLUTION: This method for producing an egg product comprises the following steps: dissolving a low-cholesterol dried yolk in pure water to obtain a yolk liquid followed by mixing the yolk liquid with a dispersion product separately produced by mixing oil and fat with dried albumen, and thereafter, heating the resultant mixture. |
