PROBLEM TO BE SOLVED: To provide a method for eliminating the nasty smell of shark meat therefrom with its sliced condition kept intact to such an extent as to have no problem at least in eating it raw. SOLUTION: This method for eliminating the nasty smell of shark meat therefrom comprises the following steps: soaking slices of shark meat in running water to conduct a leaching thereof followed by eliminating the water contained therein from the thus treated slices; preferably, soaking frozen slices of shark meat or frozen minced shark meat in running water and conducting a leaching thereof while defrosting followed by eliminating the water contained therein; wherein it is preferable that the temperature of the leaching water is kept at <=35 deg.C, the leaching time is set at 20 min to 12 h, and the shark meat is subjected to dehydration so that the weight of the resultant shark meat is as much as <=90% relative to that before leaching. |
