The leavening unit consists of a chamber (2), steam generator (3), air fan (6), fan chamber heater (4), floor heaters (14,15), moisture sensor (9), pressure relief valve (13) and outlet (11) controlled by a valve (12). This valve is operated by a processor (10) according to signals received from the moisture sensor (9), temperature and gas sensors. The processor also controls the fan speed, the steam production and the heater outputs. Heaters (14,15) reduce the temperature gradient across the leavening chamber and so improve the sensitivity of the controls opening valve (12).
