PROBLEM TO BE SOLVED: To provide a preparation process of an antioxidant which has a wide application in the industry and yields an anti-oxidizing component using an Alpinia plant. SOLUTION: Alpinia plant is immersed in an aqueous solution of a useful microorganism or a useful fermentation bacterium and fermented to impart the aqueous immersion or the fermented products with a high anti-oxidizing effect. Furthermore, Alpinia plant may solve various industrial problems concerning oxidation.
