MILK COMPONENT AND METHOD FOR PRODUCING THE SAME

PROBLEM TO BE SOLVED: To obtain a milk component composition excellent in resistance to oxidation under photoirradiation, to provide a method for producing the milk component composition, and to obtain foods excellent in resistance to oxidation under photoirradiation using the milk component composition. SOLUTION: This milk component composition is such that resistance to the oxidative deterioration of lipid ingredients induced by light is raised to suppress the deterioration of flavor or generation of nasty smell due to oxidative deterioration of the lipid ingredients through removing riboflavin from an aqueous layer (hydrophilic fraction) of milk, dairy products or dairy materials separated or fractionated from milk to reduce the riboflavin content of the aqueous layer. The 2nd objective method for producing the milk component composition is provided and foods containing the milk component composition are obtained.
