PROBLEM TO BE SOLVED: To obtain a low-cost plastic oil and fat which has a suitable plasticity range as a raw material oil and fat for margarine and shortening for confectionery and has good whipability and appearance. SOLUTION: This plastic oil and fat is obtained by subjecting a compounded oil and fat comprising an oil and fat containing at least 20 wt.% palmitic acid (such as lard, beef tallow, or palm oil), a laurin oil and fat, and a liquid oil and fat to transesterification and then to hydrogenation.
