The preparation of optically active cyanhydrites comprises reacting oxo compounds with e.g. cyanic acid or a cyan donor in the presence of an oxynitrilase composition (I), where (I) is produced by cross-linking the enzyme to increase the molecular weight and subsequent engulfing in a gel or a gel complex.
