PROBLEM TO BE SOLVED: To obtain bean-curd refuse of high preservability without impairing its water retentivity, etc., through enabling the continuous sterilization of bean- curd. SOLUTION: The subject method for producing moist bean-curd refuse is characteristic in comprising the following process: micronized wet bean-curd is fed into a scrape-type heat exchanger where it is heated to >=120 deg.C and then cooled, and the resultant bean-curd is sterilely packed and enclosed. |
