PROBLEM TO BE SOLVED: To provide a dough mixer which does not repeatedly add excessive forces to a part of a dough, even when the dough is changed into the form of a mass in the mixer, does not affect the net-structure of the already formed gluten and does not generate heat in the dough to raise the temperature of the dough. SOLUTION: This dough mixer having a kneading vessel forming a vessel whose cross section has an approximately closed U-shaped shape as a whole shape, and a rotatable kneading roll disposed in the kneading vessel in the axial direction, characterized in that the kneading roll is fixed to both the ends of the rotary shaft 4 which is disposed in the center of the kneading vessel and can be rotated, and has kneading rod-attached plates in which a plurality of arms are radially protruded and in which kneading rods are attached to the tips of the arms, respectively, and in that each kneading rod has a rod-like shape in which large diameter portions and small diameter portions are alternately disposed.
