摘要 PROBLEM TO BE SOLVED: To provide a beer which inhibits the hydrolysis of polysaccharides contained in the beer into monosaccharides and consequently reduces the absorption of the saccharides from intestinal walls by adding and compounding a food ingredient inhibiting or controlling the action of a digestive enzyme (α- glucosidase) in the mucous membranes of human intestines to the beer, and to provide a method for producing the beer. SOLUTION: This beer characterized by compounding a beer with a proper amount of a mulberry extract which plentifully contains a mulberry leaf ingredient, DNJ (1-deoxynojirimycin), that effectively inhibits or controls the polysaccharide-hydrolyzing action of the digestive enzyme (α-glucosidase).
