The invention concerns an accessory (1) for preserving the fingers of an operator, in particular when he is cutting a fruit or a vegetable (13), for example in slices (15). Said accessory (1) consists of a shield (2) matching the shape of the phalanges of the hand, and a closed or open ring, fixed on the inner face of the shield (2), and designed to retain the accessory (1) on the user's finger, while leaving the hand sufficiently free.
