The lunasin peptide has been shown to exhibit inhibitory effects against malignant transformation of cells induced by chemical carcinogens and viral oncogenes. The present invention relates to a method for large-scale production of lunasin using recombinant DNA technology. The invention also includes a method for a rapid, <i>in vitro</i> transformation assay to detect and quantify the biological activity of this cancer preventive peptide.
