发明名称 PRODUCTION OF INSTANT OYSTER PORRIDGE AND COMPOSITION THEREOF
摘要 PURPOSE: A process of preparing instant oyster porridge by coating oyster with a coating agent such as alginic acid and carrageenan and a coating aid, then mixing previously gelatinized rice with gum, common salt or the like and then sterilizing is provided. Whereby, the porridge has improved texture, excellent compatibility with other products and increased long-term storage stability. CONSTITUTION: Rice is soaked in water for 2 to 5 hr, gelatinized with ground rice and starch in a kettle until viscosity attains 700 to 1,000cP and mixed with gum, common salt, oyster extracts or the like. Oyster is coated with a coating agent selected from the group consisting of alginic acid and carrageenan and a coating aid selected from the group consisting of starch, carboxy methyl cellulose and skim milk, mixed with the rice mixture and sterilized at 115 to 130deg.C for 15 to 35 min in a retort sterilizing device. The porridge comprises 1 to 8% by weight of an oyster, 5 to 15% by weight of rice, 1 to 5% by weight of starch, 0.1 to 0.5% by weight of gum, 0.1 to 0.5% by weight of common salt, 10 to 30% by weight of an oyster extract and 55 to 75% by weight of water.
