<p>A process of producing cheese in a cheese producing installation. The process comprises the steps of adding salt to a concentrate comprising water, fat and protein, and then performing a bacteria-killing treatment for killing bacteria in the salt, and then casting the concentrate into containers at a temperature between 10°C and 55° C. The invention also relates to an installation for producing cheese from a concentrate comprising protein, water and fat. The installation comprises means for providing a continuous flow of concentrate, means for adding salt to the flow of concentrate, and means for performing a bacteria-killing treatment for killing bacteria in the salt.</p> |
