PROBLEM TO BE SOLVED: To obtain an improving agent for fowl egg properties capable of obtaining a fowl egg not requiring an aging, etc., showing a high foaming property even just after the egg-laying, having a high holding power of produced bubbles, less in reduction of the bubbles, also having a heavy weight of its yolk part, maintaining its rise for a long period of time and less in reduction of the weight of the egg. SOLUTION: This improving agent for fowl egg properties is obtained by using a surfactant, preferably at least one selected from a group consisting of a glycerol mono-fatty acid ester, glycerol di-fatty acid ester, poly-glycerol fatty acid ester, sorbitan fatty acid ester, sucrose fatty acid ester, propylene glycol fatty acid ester, lecithin and soybean phospholipid. |
