PROBLEM TO BE SOLVED: To provide a method for controlling the output of a wheat flour dough-kneading machine by which the breakage of the structure of gluten in a process for kneading and producing the wheat flour dough can be minimized. SOLUTION: When a wheat flour dough to which kneading water is added in an amount of >=35% based on that of the wheat flour is produced, the angular velocity and rotation direction of the output shaft of the kneading machine is continuously controlled in response to the state of loads changed by the production state of the dough. An electric motor for the output shaft of the kneading machine is used not only as a power generator but also as a sensor for detecting the state of the wheat flour dough, followed by using the detected results for carrying out the feedback control of the kneading output. A higher effect is obtained by calculating a set sequence and the state of the wheat flour dough and then feeding back the calculation result to the control of the kneading.
