PROBLEM TO BE SOLVED: To obtain a new chitinase having usefull functions and to provide a method for producing the chitinase. SOLUTION: This chitinase is characterized as having the following physicochemical properties: (1) action: randomly cleaving theβ-1,4 bond of chithin and producing a tetramer and a dimer of N-acetylglucosamine without producing a monomer of the N-acetylglucosamine, (2) optimal pH: 6.5-10.4, (3) stable pH: 7.0-9.0, (4) optimal temperature: 37 deg.C, (5) acting temperature range: 4-60 deg.C and (6) thermostability: retaining >=60% activity after heating thereof at 40 deg.C and pH 8.0 for 30 min. The method for producing the chitinase is characterized as culturing a chitinase-producing microorganism belonging to the genus of marine psychrotrophic bacteria Vibrio and capable of acting on chitin and producing the N-acetylglucosamine oligomer and collecting the chitinase from the cultured product thereof.
