PURPOSE: Provided is a method for preparing a cake using bean-curd dregs with Schizandra chinensis BAILL., carrot or pumpkin. This cake has natural color of the bean-curd dregs and abundant nutrients promoting physical health. CONSTITUTION: The cake is prepared by the steps of: (i) mixing soybeans and water in the ratio of 2:7, pulverizing the mixture, and separating bean-curd dregs from soybean liquid; (ii) naturally drying the bean-curd dregs at 10-17deg.C for 4hrs and drying them with hot air at 30deg.C for 3hrs, at 40deg.C for 2hrs, and at 50deg.C for 0.4hrs in order until the weight of the bean-curd dregs decreases by 50%; (iii) pulverizing the dried bean-curd dregs; (iv) mixing water and soybeans in the ratio of 2:1, processing the mixture for preparing fermented soybeans, and extracting yeast from the fermented soybeans; and (v) mixing the powdered bean-curd dregs and the yeast with eggs, milk, butter, brown sugar and liquor, and then forming the mixture into a cake. A little amount of powdered additive made from one of Schizandra chinensis BAILL., carrot, pumpkin, mugwort and cucumber can be added to the powdered bean-curd dregs.
