METHOD FOR PRODUCING RED POLISHED BARLEY CULTIVATED BY MONASCUS SP. CONTAINING SELENIUM

PURPOSE: A production method of red polished barley cultivated by Monascus sp. containing selenium is inoculated is provided to get the barley with improved physiological functions and increased monacolin-K content generating pigment and preventing carcinogenesis. CONSTITUTION: The method is characterized by the following steps of: (i) adding 1-2.5times of water to polished barley, based on the total weight of the barley and adjusting the pH value to 3-4 to swell the polished barely; (ii) dehydrating the swollen barley and steaming the dried barley at 95-110deg.C; (iii) inoculating 1-10%(w/v) of Monascus sp. to a culture medium and cultivating the medium at 30-40deg.C for 30-40hrs; (iv) adding 10-50ppm of sodium selenite(NaSeO2) to the medium and culturing for 2.5-6.5days to get a culture solution for spawns of the Monascus; and then (v) inoculating 1-10%(w/v) of the resulting culture solution to the steamed barely and cultivating at 28-38deg.C for 3-6days before sterilizing and drying the barley. The culture medium is composed of 1-3wt% of powdered polished barley, 0.1-1.0wt% of glucose, 0.1-1.0wt% of yeast extract and 0.01-0.06wt% of dicalcium phosphate.
