PURPOSE: Provided is a method for manufacturing dietary fiber from the shell of seafood including Ascidian. And functional foods containing the same is also provided. The dietary fiber increases viscosity and water contentability of and provides physiological functions to the functional foods. CONSTITUTION: Dietary fiber is isolated by the steps of: i) extracting the shell of seafood with mixed solution of oxidant, acid and water; ii) washing the extracted shell and dipping it into alkaline solution; repeating steps(i) and (ii) at least one more time. Wherein, the shell is characterized by being obtained from Ascidian; the oxidant is selected from the group consisting of NaClO2, NaHSO3, K2S2O5 and Na2SO3; the acid is selected from the group consisting of acetic acid buffer solution, citric acid buffer solution, and lactic acid buffer solution; the alkaline solution is selected from the group consisting of sodium hydroxide, potassium hydroxide, and calcium hydroxide. The functional foods, for example confectionery, bread, noodles, jam, jelly, fish pastes, beverage and the like, contain 0.1-20 dry weight % of dietary fiber.
