The invention relates to a method for producing solid sugar surfactants. Said method is characterised in that glycoses are acetalised in the known manner with fatty alcohols and the advanced mixtures which still contain at least a portion of excess fatty alcohol, in addition to the alkyl and/or alkenyl glycosides, are brought into contact with solid extraction agents. This results in the creation of a first solid phase, which contains the extraction agent, in addition to the larger portion of the alkyl and/or alkenyl glycosides and a reduced portion of the fatty alcohols, in relation to the starting mixture and a second liquid phase which consists predominantly of isolated fatty alcohol.
