PROBLEM TO BE SOLVED: To obtain a processed product of special vegetable of the genus Allium having many excellent properties of leek, having high pharmacodynamic effect and nutritive valve, useful as a health food. SOLUTION: A special vegetable of the genus Allium obtained by growing leaf blade parts 1 from a small bulb of leek among vegetables of the genus Allium, dividedly raising parts higher than base parts 2 of the leaf blade parts 1 so as not to overlap the parts in a striding manner and independently cultivating the parts in a flat state is used. The special vegetable of the genus Allium is dried by freeze-drying into powder. The powder is formulated with a granular protein collage to give the objective processed product. The formulating ratio of the granular protein collagen is 3-50 based on 100 of the powder of the special vegetable of the genus Allium.
