technology of production of drink on base of citrus juice with pulp. SUBSTANCE: citrus fruits, after extraction of bitter substances from flavedo by nonpolar liquefied gas, are treated by lipid-containing extract of biomass of microorganisms Pythium insidiesum and aged. Then fruits are crushed by ultrasound in presence of peroxidase and blended with sugar syrup. EFFECT: increased stability of thickened drink to microbial spoilage. 2 ex
