PURPOSE:To obtain an oryzanol emulsion stable even in a low pH region and in a high salt concn. region in the presence of an electrolyte, by using propylene glycol alginic ester as the emulsifier of the oryzanol emulsion. CONSTITUTION:An oryzanol solution obtained by dissolving oryzanol in ethanol is mixed with water to disperse oryzanol in water and, after ethanol is removed by distillation, an aqueous solution of propylene glycol alginic ester is added to prepare an oryzanol emulsion. Thus obtained emulsion is extremely stable and shows dispersibility even in a low pH region, in a high salt concn. region and in the presence of an electrolyte and is widely used in food or cosmetics. |
