摘要 PURPOSE: Provided are premix for glutinous rice doughnut and a method for preparation of the same. The premix gives chewy taste convenience in use and is excellent in long term storage. CONSTITUTION: A method for preparation of glutinous rice doughnut is composed of following steps of: (a) washing, soaking, dehydrating and pulverizing glutinous rice; (b) drying it at 30-65 deg.C successively with far-infrared rays for 30-180 min., until its final water content reach 9-16%; and (c) mixing 50-70 wt.% of resulted dried glutinous rice powder with 30-50 wt.% of sub-ingredients including sugar, wheat flour, baking powder, glucose.
