PROBLEM TO BE SOLVED: To improve the operating efficiency and facilitate the handling before and after the processing of a sausage, raise the productivity and reduce the cost of the sausage by improving a cylindrical holding tool for a casing used when filling a raw material for the sausage at the time of processing the raw material for the sausage and producing the sausage in relation to the cylindrical holding tool for the casing and an apparatus for producing the sausage. SOLUTION: This cylindrical holding tool 2 for the casing 3 is obtained by composing the cylindrical holding tool 2 for the casing 3 into the cylindrical form having a gap 4 formed in the longitudinal direction in the cylindrical tool 2 for the casing 3 designed to transfer the casing 3 for the sausage onto the outer periphery of a filling nozzle 32 for feeding a raw material for the sausage. Thereby, the casing 3 is prevented from falling off and the transportation of the cylindrical holding tool 2 for the casing 3 is facilitated. The productivity of the sausage is improved by using the cylindrical holding tool 2 for the casing 3 having the gap 4.
