SOLUTION: This tableware washer has a washing tub 31, a washing water supply means 32, a water level sensor means 33, a washing means for pressurizing and jetting washing water, a washing water heating means 35, a temperature detecting means 36 and a control device l for controlling the washing means 3 or the water supply means 32, etc. In the main washing process, the power of jet water of the washing means 3 is increased and heating and washing is executed with a quantity of washing water at a first water supply level, then washing water is drained to a second water supply level, lower than the first water supply level, the power of jet water of the washing means 3 is reduced, and the washing water is heated to wash the tableware.
