PROBLEM TO BE SOLVED: To provide a tableware washer/dryer capable of reducing energy consumption with an improved washing capability by controlling the quantity of water supply and the power of jet water at multiple levels. SOLUTION: This tableware washer has a washing tub 31, a washing water supply means 32, a water level sensor means 33, a washing means for pressurizing and jetting washing water, a washing water heating means 35, a temperature detecting means 36 and a control device 1 for controlling the washing means 3 or the water supply means 32, etc. In the main washing process, washing is started with a small quantity of washing water at a first water supply level and with the lower output of the power of jetting water of the washing means 3, and after the washing water is heated to a first washing temperature by the heating means 35, washing water is added up to a second water supply level and the power of jet water of the washing means 3 is increased to wash the tableware.
