PROBLEM TO BE SOLVED: To provide a method and apparatus which are intended for efficiently shaping a food in uniform quality with improved appearance by making crisp food coatings of low residual water content firmly adhere to food ingredients with moderate hardness and plasticity as a unit without causing food coating breakage and/or ingredient overhang. SOLUTION: This food shaping apparatus has a shaping head plate 24 for pressing into food ingredients and food coatings, a molding tool 17 with the above head plate 24 to be pressed thereinto, and a forming table 18 disposed so as to be movable to a position against the head plate 24 inside the molding tool 17 for receiving food ingredients and food coatings; wherein after a food is subjected to compression forming by the head plate 24, the forming table 18 is moved opposite to the compression direction along the flank of the molding tool 17 and the periphery of the compressed food is further formed along with facilitating its withdrawal; in this case, the food coatings can be extruded uniformly, enabling the food coatings to be unified with the food ingredients without breakage of the coatings. |
