PROBLEM TO BE SOLVED: To provide a method for efficiently producing in a short time a seed- containing mustard having mild hot taste, rich gustatoriness and flavor peculiar to mustard, and big seed-state touch. SOLUTION: This method for producing a seed-containing mustard comprises such processes that mustard seeds are crushed and added with an aqueous raw material to produce hot taste ingredients followed by removing part or the whole of the above hot taste ingredients through extraction treatment to obtain moist mustard seeds-crushed products; thereafter, one or two product(s) selected from the whole of mustard seeds and roughly crushed mustard seeds obtained by roughly crushing mustard seeds are added to the moist mustard seeds-crushed product thus obtained. |
